Calyst (sugar) in Date Products- What it really is

Calyst formation is the cluster of sugar particles appearing in sweet products.

This also happens in fully natural no sugar added products such as date syrup and date paste, specially if stored in cold environment or gone through environmental temperature changes.

You will notice formation of creams sugary particles in the product. This is totally natural and does not mean the product has gone bad or had added sugar.

In date products the calypso forms from the sugar naturally available in the date fruit. You might also see the calypso formation on the date fruit itself (Image bellow).

You can  place the product in a warmer environment and mix it and the calypso will dissolve back into the product. You can also place the jar in a hot bath (and that will dissolve the sugar particles) and then stir afterwards.
